Amazing French Toast

Ingredients


  • 4 large eggs

  • 2/3 cup milk

  • 1/4 cup all-purpose flour

  • 1/4 cup granulated sugar

  • 1/4 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

    • 8 thick slices bread

    Instructions

    • Preheat griddle to 350 degrees F or or heat a skillet over medium heat. Grease well with butter.
    • Add all ingredients, except the bread, to a blender or to a shallow dish and whisk well to combine. If whisking by hand, it's okay if the flour doesn't mix in completely smooth. 
    • Dip bread slices into the egg mixture, dredging them well on both sides, and place on hot, greased griddle or skillet.
    • Cook for a few minutes, until the bottom of the breads starts to get golden brown. Flip and cook on the other side the same. 
    • Remove to a plate. Serve warm, with syrup and a sprinkle of powdered sugar.

    Notes

    Freezing Instructions: Allow french toast to cool completely and store in a freezer-safe container for up to 3 months. Reheat in the microwave.

    German Pancakes

  • 6 large eggs

  • 1 cup milk

  • 1 cup all-purpose flour

  • dash salt

  • 1 teaspoon vanilla extract

    • 5 Tablespoons butter

    Instructions

    • Preheat oven to 425 degrees F. 
    • As oven preheats, put the butter in an un-greased 9x13-in. baking dish and place in oven, just until melted.  
    • Place the eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into baking dish, over melted butter. 
    • Bake, for 22-27 minutes or until edges are golden brown and puffy.
    • To serve, sprinkle generously with powdered sugar and syrup

    • 1/2 cup butter
    • 1 cup sugar
    • 1 cup buttermilk
    • 1 tablespoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon baking soda

    How to make homemade syrup:
    Start by melting the butter in a large saucepan.  (Make sure your saucepan is large because the sugar will foam and rise significantly once you add the baking soda).
    Add the sugar, buttermilk, vanilla, and cinnamon and whisk to combine.
    Bring the mixture to a boil, and once boiling turn it down to simmer for 2 minutes while whisking constantly.
