Palak Paneer
1 can coconut milk (12-14 oz)
4-5 cups of chopped/blended spinach (I just do a couple of handfuls. It's okay to err on the side of too much spinach. I will be doing much more next time)
1tsp salt
1/2 tsp garam masala
1tsp chopped garlic
1 heaping tsp of tomato paste
1/2 tsp minced ginger
1/4 tsp turmeric powder
1 chopped onion
Throw all that in the crockpot for 3 hours on low.
Melt 2 tablespoons of butter in a pan. Cut paneer into rectangles (like a cube but thinner on one side). Brown a little on both sides. When done, out the paneer in with everything else.
Voila!
